Today I’m sharing a Ricotta Cookie Recipe I found and it turned out phenomenal they disappeared so quick when I took them to work. So this recipe came from the Davita Kidney Care website so I can’t take full credit for it but I modified a few things. First of all, I switched the sugar to brown sugar because this retains the moisture of the cookies better. I don’t like dry cookies. But the molasses in brown sugar keeps it moist. And I cut down the amount to 1 cup instead of 2. It was still sweet enough that I could have decreased it a bit more.
350°F for 12 min on convection mode was perfect at my house. Now the recipe called to make 36 cookies for a 1 tablespoon size dough. I ended up with 75…Maybe it was 36 servings with 2 cookies.
