I’ve been doing Meal Prep Mondays because I work 4-10s. And it gets dinner on the table quicker when I have things prepped ahead of time. So this week, I meal prepped some Stuffed Peppers ahead of time. I don’t make traditional ones with tomato sauce and rice but I do a variety of different peppers. Today was an Italian-style cheesy peppers.

Take some ground meat, mix in onion soup mix, Lawry’s Seasoning Salt, black pepper, Italian seasoning, egg, Worcestershire sauce, breadcrumbs and mozzarella shreds and stuff those peppers. Top with pasta sauce and cheese along with parsley and breadcrumbs as topping. 
Now all I do is cover this with foil and Chuck it in the fridge and when I’m done with work, I just call Hubby and ask him to preheat the oven and bake it so it’s ready by the time I get home.
I didn’t take a picture of it but I also made one out of four lunches ahead of time in case we don’t have leftovers. We actually did a big batch of soup on Monday so that made leftovers for lunch and dinner for church night. But anyhow, I baked some chicken and roasted some veggies and potatoes and boom, one lunch for both me and Hubby. So easy!
