Weekly Trader Joe’s Haul and Mini Costco Haul!

Hello everyone and welcome back to another blog post on ~Foodie with a Passion~! Happy Saturday everyone and I hope you’re having a great weekend so far. We are right back on schedule after my goof-up yesterday 🤣 As per usual we have a TJ haul today, and I even did a quick trip to Costco. Alrighty! So TJs was pretty scarce today. I didn’t get to pick up a couple of my key ingredients for my meals that I planned for next week. Even one of the freezer bins is as completely empty. I’m not sure if they were taking inventory or what but that was the emptiest I had seen on the shelves.

TJ Haul
  • Baby Spinach – for Tuscan Chicken but unfortunately my usually sun-dried tomatoes weren’t available. It seems like the jarred one in oil was processed on the same equipment as tree nuts so I passed on it
  • Romaine Lettuce – I want to do lettuce cups this week with bone-in short ribs; kind of like an at-home Korean BBQ
  • Baby Cremini Mushrooms – I already sautéed half of the package last night when I made steaks. I think I will just add the rest to the Tuscan Chicken. I’m going to just use regular tomatoes in the fridge in place of those sun-dried ones
  • Red Potatoes – I used up the rest of the potatoes that were ink the fridge so I picked up another bag so I can do Shepherds Pie next week
  • Bananas – I’ve been doing half a banana before bed to help me get enough carbs to keep my blood sugar up during the night
  • Avocados – I’ve been on a avocado kick so I went ahead and picked up a bag
  • Red Onion – I was completely out so I picked one that was in mint condition
  • Zucchini – I want to cook these off with the kabocha squash when I do the beef short ribs
  • Personal Watermelon – and this week’s main fruit. I’ll still go to Publix to pick up my berries for the week too
  • Garbanzo Beans – third week of making roasted beans; I hope I don’t get tired of it 🤣
  • Smoked Paprika – what I wish I had last week when I made chili. Now it’s in my spice cabinet so I don’t have to go buy any
  • Cayenne Pepper – same with this one too. My chili definitely needed a dash of this
  • Parmesan Cheese – for the sauce of the Tuscan chicken and maybe I’ll actually make some more Alfredo sauce for something in the near future
  • Heavy Whipping Cream – I picked up a back up whipped cream since I’ll need it for the Tuscan chicken sauce and mashed potatoes for the Shepherds Pie
  • Chicken Tenders – and the chicken for the Tuscan Chicken
Costco Haul
  • Chicken Stock – I hadn’t bought these since getting down here. I did the math and buying a case was definitely cheaper than picking up a carton every time I needed it
  • Spam – I was down to 2 cans in the pantry so I went ahead and picked up another case. Side note the prices went up by about $3 for spam. I think I’m going to make Brekky Bowls for next week’s breakfast prep with spam, eggs and cheese
  • Beef Snack Sticks – I couldn’t find the chicken sticks so I decided to get these for me since I’m in dire need of higher protein snacks now that I’m in the second trimester
  • Canned Chicken Breast – I want to make cream cheese chicken roll ups with veggies. That’s probably my lunch for today. I’ll take a tortilla, spread cream cheese and a little Mayo and add cucumber, tomato and lettuce with chicken and wrap it up
