Meal Prep Monday!

Hello everyone and welcome back to another blog post on ~Foodie with a Passion~! Happy Tuesday everyone and I hope you had an awesome weekend. It was Meal Prep Monday yesterday so let’s check out what we made. But before we get started remember to click subscribe so you don’t miss another Foodie Fun 🤩

Alrighty! We have a few items this week. I got a 7lb pork shoulder for less than $7. QFC was running a sale so even though we have 3 porks in the freezer, we decided to get one and smoke it for meal prep. Unfortunately I don’t have a picture of the finished product but we had some for dinner over the weekend.

Pulled Pork Sandwich

I have plenty more burger buns so this will likely happen again for a lunch later this week.

Salads and Overnight Oats

Some of the pulled pork became salads and I made one overnight oat for the work week.

And we made a double batch of waffles to throw in the freezer. 3min at 400-425°F in the air fryer for an easy breakfast.

Breakfast Burritos

This was actually last weekend; we’ve got these egg and cheese burritos in the freezer now too.

Now, what are we going to do with the rest of the pulled pork, you might ask. Well have no fear; we had BBQ pulled pork pizza last night, which also became meal prep since we have Tuesday night church and I need lunches for the week. Two out of four lunches done for the work week; I will also do some tacos/burritos with the pork and some cabbage probably around Friday.

Lastly, I made a batch of cinnamon rolls that can be for breakfast this week and some of them into the freezer

Cinnamon Rolls

And there we have it! Let me know in the comments below what your meal preps were for the week and until then…signing off!
