Meal Prep Monday!

Hello everyone and welcome back to another blog post on ~Foodie with a Passion~! Happy Tuesday everyone and hope you had an awesome weekend. Todays post is my Meal Prep Monday so I can show everyone what I had prepped for the week. So without further ado, remember to click subscribe so you don’t miss another Foodie Fun 🤩

Alrighty! So this week, I made couple of breakfasts and a couple of things that can easily be my lunches or my dinner when I go to church on Tuesday night.

Breakfast Burritos

These are filled with scrambled egg, ground sausage, shredded cheese and salsa. I individually wrapped it and shoved in a freezer gallon bag and into the freezer it goes. I still have mine made with low-carb tortillas so these are all the regular tortillas we had in the pantry. Hubby can just heat one up for breakfast and head to work.

No picture but I made 2 mason jars of overnight oats. I fill mine with rolled oats, chia seeds, protein powder and water. In the morning, I’ll top it with frozen blueberries or the fresh raspberries we currently have in the fridge. I might warm it up or eat it as is with a spoonful of peanut butter and a small handful of peanuts.

Other breakfast option that I can just grab n go is a container of yogurt and a side of chia seeds, peanuts, homemade granola and some berries. I usually have some Greek yogurt in the yogurt bin (plain and my Light n Fit Strawberry Cheesecake) so I can pack this for breakfast anytime.

Seafood Chowder

I made this chowder with Saturday night dinner when we did Fish n Chips. I made plenty so a bowl of this can be lunch or dinner.

Baked Pasta

We had leftover meat sauce so I transformed that into a casserole and packaged them up in several containers. One is for dinner on Tuesday night and I might have some for lunch later in the week. I already packed a small salad for Tuesday’s dinner that I’ll eat with this pasta bake.

I think I made enough meals but if not, I have plenty of salad mix, black beans and corn so I can easily make a salad and cook off a protein to bring to work for lunch. And since we’re going on vacation starting Friday for a week, we are trying to eat up the fresh things. Worst case I will tell our roommate to eat up what he can 😂
