I look forward to another week with everyone! So we had some friends over the weekend we handmade some sushi together so I wanted to recount on that. Sushi rice recipe to follow! Alrighty! So sushi night was really fun. I bought bamboo sushi rollers from Amazon, prepared all the fillings and rice and we had a blast. Served with teriyaki chicken wings and a Bok choy stir fry as pictured below.

For the rice – I cooked 2 cups in the Instant Pot and added 2 2/3 tbsp rice vinegar, 2 2/3 tbsp sugar and 1 tsp salt. Mix/stir with rice paddle incorporating air into the rice as well. Cover with a wet towel to keep it from drying out.
For the fillings – we had a bunch of fillings so I’ll go through each one.
Salmon – Atlantic salmon just seasoned with salt and pan fried in the frying pan. I stole the crispy skin but otherwise, I flaked it with some chopsticks.
Egg – I used a tamagoyaki pan which is linked here similar to this one to make an egg omelet with mirin (sweetened sake) and soy sauce. after it cooled, I sliced it vertically.
Cucumber – these were cut into sticks lengthwise.
Imitation Crab – better if you get the leg type but they only had the flake style
Avocado – just simply sliced to put into the rolls
To roll sushi – place bamboo roller on the cutting board and cut a piece of Saran Wrap that is slightly oversized than the roller. Lay a piece of nori seaweed on the plastic wrap. Start with the rice and spread evenly over the nori. Lay each ingredient horizontally like you would when you make burritos. Take all layers of bamboo roller, plastic wrap and nori and start rolling holding together the ingredients inside. Once the nori can start rolling by itself, continue to do so until the sushi roll is complete and wrap with the plastic wrap. Tighten the roll with bamboo roller and place in fridge to chill for about 15-30 min (depends on desired chilled-ness)
To slice sushi – unwrap plastic wrap. Wet a chef’s knife with hot water but fling off the excess water. Make a clean cut and run hot water and fling off for each cut. Place neatly on a plate and serve. Suggest soy sauce for dipping as needed.
And that’s how you can make your own sushi at home too. Now remember, you can put virtually anything you want in the sushi. Add more veggies to make it vegetarian/vegan, switch out the fish for meat, etc. Let me know in the comments below if you try making sushi around home and until then…signing off!
