What’s for Dinner?

Normally I would do a What I Eat In A Day post but just to switch it up, I’m going to do a What We Ate for Dinner This Week post. Who hear has been in a dinner rut lately? *raises hand* Struggling to entertain your family for meals? By the end of this post, I hope my dinner ideas from this week will inspire you to help get out of that dinner rut!

Sunday’s Dinner

Our dear neighbor brought over some ingredients and we had a lovely surf n turf dinner. NY steak (sous vide – try this method if you’ve never done so!), Creamy Shrimp and Scallops with Bacon, Roasted Potatoes and Green Beans was the menu on this night.

Monday’s Dinner

We had some afternoon plans so I prepped the Corned Beef and Veggies the night before. I tossed everything in a slow cooker, added some red wine and beef broth with a few bay leaves and let it cook on the Low setting all day long. It’s getting colder so slow cooker meals (aside from Instant Pots) are definitely the way to go. I know it wasn’t CB season but I found it in our freezer so it was time to use it up!

Tuesday’s Dinner

Yes, I got a little lazy for dinner. The fiancé had overnight work and normally there’s a bunch of leftovers when he’s not home for dinner but I sent them off with him for work. I had Women’s Group so obviously did not want to cook. I still had a Free Entree Reward from Chipotle so I ended up eating out.

Wednesday’s Dinner

We bought Rockfish a while back and I looked up some recipes for what I could do with it. A lot of recipes called for Parmesan-Crusted Rockfish, which is exactly what I did for it. I used Japanese panko breadcrumbs mixed in with Parmesan cheese and air fried it until golden brown. This was my first time actually “frying” in our air fryer. We’ve always used it to crisp up or reheat things. Note to self next time to flip the fish halfway so both sides get crispy. Served with Seeds of Change Quinoa and Brown Rice and Green Beans with Bacon Sauté.

Thursday’s Dinner

After begging the fiancé for the longest time to please make me some Philly Cheesesteak…it finally happened! My hoagie rolls are kind of big and I was a bit intimidated by the size of the sandwich but I devoured it all. These rolls are perfect for sharing with 2-3 people but here we are. I could have ate just half but it was so good!
