Hello everyone and welcome back to another blog post! Hope everyone’s had a good week and HAPPY FRIDAY!!! Can you believe it’s already May??? The month went by so fast!
My week was pretty good…my Facebook Live Event with Kounsel happened on Monday, and I did some more gardening this week. I’m going to right a full blog post on that sometime next week, so stay tuned! Alrighty! Since we are in a new month, I wanted to share all the meal prep I did for the month of April so let’s get started 🙂









All of these can be made ahead to be reheated at a later time or be “remakes” so using leftovers and enhancing what you already have. It’s so much better than making something that takes forever to eat. Make it once, eat it later. Simple as that.

Also, you’re probably wondering what my announcement is…
Starting this month, I want to start doing month-long challenges. So, for the month of May, the challenge for the month is…SQUATS! Yes, you heard (or read) that right. I will be starting today May 1st all the way through May 31st to do 30 squats every day and to see if any results happen. I’ts been a while since I’ve done squats challenge for myself (about 2 years ago, as a matter of fact), so I’m going to start with what I can handle. I’ll do a full post for the first post in June. I’ll take BEFORE and AFTER photos and if I can find a tape measure, maybe take some measurements and most of all, keeping myself accountable with everyone.
